Strange grinding

So, my truck has started having a weird grinding issue coming from somewhere in the back half of the vehicle. It only happens when going up hill and having apply the go pedal to overcome my own momentum. I have yet to hear/feel this going on flat road or down hill, and it happens 98% of the time on the highway. It does not do this around town (50mph and under). I replaced a wheel bearing last year and it is not making the same noise it was when I figured that needed to be replaced. It is extremely hard to troubleshoot since I can only do reproduce the sound on certain stretches of road. Any ideas?

Check your parking brake pads by pulling the rotor off the rear.

No. but it is a good place to start looking.
Does your parking brakes work?
Do you ever use them?
When is the last time have you pull the rear rotors? (not changing just the pads but actually pulling the rotors)
when mine got to be rusted mess (I never used them) the same thing happened all the little bits would get to the emergency brake shoe at higher speeds and during fast acceleration.
Plus if that not it, gets you under the truck looking and you could spot the problem.
Hell you could find a shrub or something simple.

+1 on checking the brakes. I had a front caliper that was intermittently sticking on me last year. I knew the wheel hub assembly on that same wheel was on its way out, so initially that's what I thought it was. When I took a closer look though, I saw the rotor was looking pretty ragged. And when I pulled the wheel, it was clear that the caliper had partially seized up on me.

Hell you could find a shrub or something simple.

I had this happen a couple months ago. I was driving home and started hearing a little tap under the truck. Hmm, I had better check that when I get home. Then it starts getting louder and louder until it sounds like someone is beating the undercarriage with a club. Lo and behold, it was a fairly large branch that had somehow gotten wedged under the truck in a way that it was hinged on there at the upper end. Every time the lower end fell, the road would send it hurtling back into the undercarriage and it just ping ponged back and forth.
