Temp guage pinned at High
Best thing to do, is get a mechanical gauge, and see what temp your engine really is running. You probably just have a bad gauge, but I would check and make sure first. If you don't know how to do that, most shops can and will tell you how to do it. Goodluck, hope you get it fixed.- LeeLeadingham

removing cats questions
As far as computer problems goes, You will only throw o2 sensor codes. If you are removing all the cats I would recommend replacing them with High flow cats, or replacing the muffler with a better one.
