Just purchased a 2007 Ford Expedition (Eddie Bauer Package).
This does NOT have Ford Sync.
First, I would like to change out the radio for a double din stereo with apple car play.
However, I'd like to keep the steering wheel controls.

Anyone have any recommendations? Any issues I should know before I start?

You should be able to find a product that will allow you to keep the steering wheel controls. I got mine through Crutchfield.

I got a kit from Crutchfield, Kenwood DNX874S with the accessories needed to keep Steering controls, Sirius radio, and GPS.
Has Carplay, Garmin maps and lots of options.....About $900.00

I just put a Pioneer AVH200 in mine. It works with the steering wheel controls. One thing I did find was that you have to buy a module to connect the head unit into my existing wiring, since I had the radio with the Sub from the factory. Mine is the Eddie Bauer as well.
