I’ve got the headrest DVD system installed on my 2012 EL Limited, both of the DVD players are mechanically worn out, but I noticed there’s an AUX/TV input on them and thought I could use that input and install an HDMI connector in the rear console to plug in a Blu-ray player or other device.

I can seem to find the location of the head unit that drives these though. I see the cables feed under the rear console, but they appear to keep going through the console somewhere.

does anyone know where the head unit is typically installed on these?

With the headrest DVD units, only if they were installed at the factory can you use the factory NAV unit to control them. The wires from the headrest units go to a controller box behind the rear panel of the center console. Look up how to remove it if you want to get to it. But, that's not the answer you are looking for.

If you want to use an external player, you can. You can use the audio/video out, plug in to the aux in of one of the units and play on both of them from there. That's your only option based on the information you've provided.
