One thing to check,
There are two alternators for that vehicle. Does you vehicle have navigation?
With navigation you get the higher amp alternator
without nav you need the lower amp alternator.
wrong one will cause the battery light to be on.

NOTE: The 5100's are NOT for stock ride on an Expedition. Doesn't matter what height they run at. That is why you felt every pothole and bump.
If you get the Bilstein meant for stock ride on the Expedition, you will have a lot better ride.
Was it raining?
There is a known problem with the windshield leaking and it gets the gem module wet.
Is the drivers floorboard under the parking brake wet?
If you dry it out everything should work again. (put a fan blowing up under the dash on the drivers side.)
It will get wet again unless...
On the 4 speeds all it does is lock out overdrive. Pretty much what you are asking for.
So what makes the tow/haul button not useable for you in the mountains?
It could just be a sales sticker average, for exact numbers you should look on the door plate.
Im sure it's in the small print somewhere.

What is the maximum difference between the sticker average and vehicles actual door plate?

So you are saying you changed both front wheel sensors on a 2001 ford Expedition?
That could be part of your problem as
1st Generation (1997-2002) Expeditions do not have wheel sensors.
Could be the water pump going bad.
Look at the water pump above the pulley there is a "weep Hole" it Leaks when the water pump seal is going bad.
If it is leaking there you will need a new water pump.
When it is on the cap but not in the oil, it is just condensation. nothing to worry about.
Now if the oil on the dipstick is milky, you have a problem.
Bilstein 4600's are the stock equivalent for an Expedition/F150 and 5100 are the stock equivalent for a F250/F350.
Many Members have the 5100 here because it gives them lift not comfort.
