Thermostat can be verified by putting it in hot water with a thermometer. Not real scientific but if you see it open fully it's probably working. Even if you just change it anyway you could still test it (even alongside the new one) just to know if you found the problem.

You're probably feeling the valve springs pushing against the cam lobes. Without engine oil pressure chains will be looser. If it were mine I would pull valve covers to look at all of it.

Pretty sure your factory oil pressure gauge is just actually a switch. I think it's 7? psi switch, good gauge reading only means more than 7. Maybe 10, maybe 60. It's more like an idiot light than a gauge.

By all means you need to identify the source of the gas smell. You don't want to be one of those burnt spots on the shoulder.

Things I would look at-
Smoke test for vacuum leaks, oxygen sensor deterioration (I change them at 100k), fuel quality, ECT/IAT accuracy, MAF cleanliness, IAC performance, and if injectors haven't been professionally cleaned they might be ready.

A couple of things to consider-
Send your oil off for analysis. Until then the oil situation is just a guess.
You mention that you got oil out of your turbo plumbing. Oil can accumulate in the turbo plumbing and intercooler and obstruct flow.
