The readylift SST lift kits provide 3" front and 2" rear lift. If you want to upgrade your shocks, I know rancho has shock absorbers for 2 to 4 lift systems.
Go with Performance Accessories body lift kit. It is inexpensive and effective way to lift your Expy. Pressure wash the underneath and spray everything with pb blaster as a prep. With a body lift, you can also crank the torsion bar and add coil spacers so that you can easily fit 315's.
I agree that tire size affects fuel mileage. Having bigger/heavier tires can result in a decrease in fuel economy. Balancing your mud tires can help provide a smooth ride on pavement.
