Sudden battery death?

I had a 2015 also. Put a new battery in it. Didn't do any battery reset procedure. I guess it sat long enough to reset on its own.

I have a 2019, and while the battery seems fine (had zero issues) as noted by the OP, it simply ‘stopped working’. So how is a battery pairing performed?
The battery can be paired with a scanner but when I replaced the battery on my wife's car this is how I did it. I don't know if this works for an Expedition but you can Google it.
To reset the battery management system (BMS) on a Ford Escape, you can try these steps:

  1. Ensure all doors, windows, and hatches are closed.
  2. Turn the ignition to the on position, but don't start the car.
  3. Flash the high beams five to seven times.
  4. Press the brake pedal three times.
  5. Wait for the battery light to flash.
  6. Wait until the battery light stops flashing and goes away.
You can also reset the BMS using FORScan, an OBDII > USB interface cable. You can connect to your Ford Escape and find the option to reset the Battery Monitor System in the "settings" tab.

I've changed the battery 2X in my 2017, and did not know about the battery reset process. Both times the battery was out of the vehicle for 5 or more hours and I had no issues. This is from page 252 of the 2017 owners manual.

After battery replacement, or in some
cases after charging the battery with an
external charger, the battery management
system requires eight hours of vehicle sleep
time to relearn the battery state of charge.
During this time your vehicle must remain
fully locked with the ignition switched off.
Note: Prior to relearning the battery state
of charge, the battery management system
may temporarily disable some electrical
systems.
