I don't think you'll lose any mileage and if you can install them yourself, do it. Too tall gearing overloads your engine and hurts mileage in all but perfect condition. Try riding a bike in the highest gear, notice how much harder you have to work.

There's no question about getting a lot of power out of turbo motor or that they are a lot better then turbos of the 80's. However an engine that has a lot of boost is under a lot more stress then one that isn't boosted. There's no way around that.

I was just worried about the long term durability of a small V6 running high levels of boost while towing a heavy trailer. All for little or no advantage in fuel economy.
But yeah, V8's do sound better.
The problem with the 4.6 isn't power it's torque. If you check the specs you'll see the 4.6 and 5.4 have the same bore. The difference is entirely stroke and that's what gives you low end torque.
The 4.6 is much better in the mustang. It's just not a tow engine.
I had two coils changed at the dealer and they "stress tested " the other six. The random stumbling continued, no codes. Took the advice of the forum and a neighbour Ford fan and replaced the remaining 6 with aftermarket name brand coils.
Problem solved.
My local Ford dealer wanted $110 per coil so I bought Delphi from Rock Auto for $35.
I agree with the above comment. Skip the super cheap no name brands but any name brand should be fine.
My truck isn't flex fuel but it doesn't matter as I have never seen a station that sells it. Not sure if it's available in Canada.

If the bumper is designed for light towing you should be fine. I towed a utility trailer for years with a step bumper like that on a mini pickup.
Given the age of your truck I would closely inspect the bumper where it is mounted to the truck frame though. My mounts rusted out after a decade.
