The sudden onset of your symptoms points more towards a bad coil than a tranny issue, also by the intermittent nature of the symptom. Do you have a scanner (a good one) that can show you total misfires per cylinder? It takes a large number of misfires before the CEL comes on.

Completely reset the PCM. That will 'unlearn' the shift points and throttle maps from the previous owner. The following will help in diagnosing any issues by resetting the computer to 'default' values.

Is there an issue with the MX WiFi? Just curious. I have a cheapo ELM Wifi Adapter that does not have access to MSCAN, and the MX WiFi was one I was considering to purchase.
There's probably quite a bit of lag between the sensor output and the displayed value; I would also guess the ECM does some averaging of a set number of data samples to smooth the response of the rest of the engine controls.
