I think you are right. In looking at the 2018 brochure they did not list the width without the mirror. But I found what you found on the Ford site.
Here are the differences between the 2017 and 2018 Expedition w.r.t. width.
------------------------2017-------------------2018
Excluding Mirrors-----78.8--------------------79.9 +1.1 inches
Mirrors Folded--------79.7---------------------83.6 +3.9 inches
Mirrors Extended-----91.8---------------------93.4 +1.6 inches
So the major difference is how compact the mirrors are when folded. In a way this is nice since I use the mirrors to ensure that I am not scraping the side of my car as I pull into the garage. So with the 2018 the delta between the mirrors and the side of the car is greater. I have a little more margin for error.
