I belive on the stock rims about as wide as you can go would be a 285 series so a 285/75/17 which equals 11.2" wide and 33.8" tall would be the largest you could go on stock rims. The tires will BALOON quite a bit so the rim will be protected by the sidewall of the tire but I do not think you can go any wider on the factory rims because this width would be pushing the limits of your 7.5" wide rim.
If you step up to a 9" wide rim (with the correct back spacing of roughly 4 & 5/8") you could run 315/70/17 ( 12.4" wide and 34.4" tall) or even 325/70/17 (12.8" wide and 34.9" tall) or a 35"x12.50"x17 with trimming of the bumper valance and also the running boards, but with these sizes you will definatley need a good 6" suspension lift.
The best thing to do would be go and talk to a local off road shop or a local tire dealer to find out the size that would work best with your setup.
