Any suggestions for what products to use to clean the gray cloth interior (seats) with moderate dirt build-up? The carpet is far worse, but I plan to just cover that up with some remnants and floor mats.

I clean cloth with a can of Foam Carpet cleaner. I vacum the seats and whatever else I want to clean. Then I take the cleaner and spray the seats down take a small brush and scrub the seats. After I scrub the seats I take and wipe them with a microfiber rag and then I take the vacumm and vacumm the seats again. That usually will get them clean. Depending on how bad they are you might want to take the seats out and then do the cleaning. And while you have the seats out you can work on the carpet the same way. You will be surprised how clean you can make the seats and carpet, unless you have a lot of wear or holes.
