I have a 2007 (Eddie Bauer) expedition with the 3 valve 5.4 triton, I have to pull my heads off wich arises a couple questions,

1) Would it be easier to just completely pull the motor to pull my heads off..?

2) Will I have to re-time it since I'm pulling the heads off..?

How many miles on the motor ? If you pull the heater hoses off the firewall, pull the battery & tray, the ECM and it's mount, the power steering pulley off the PS pump. It's not too bad, just time consuming. What kinda problems are you having that you need to pull the heads? I assume a head gasket leak? Leave the exhaust manifolds on the heads till you pull them out. Just drop the exhaust pipes off the manifolds from underneath with an air impact wrench and 6pt socket. Once you get all the vacuum tubes away from the intake manifold it's pretty straight forward removal. Replace the gaskets on the crossover pipe while the manifold is off regardless. Are you going to have the heads rebuilt while they're off ? New valve springs and rocker arms are a good investment. Do you need to replace the passenger side camshaft ?
