Don't lose sleep over this, I very seriously doubt the plugs will back out because anti-seize was used.
BTW: I used Bosch plugs. Not sure what they are made of.
I didn't care at all about torque. I just tightened them down. I've replaced hundreds of plugs and never torqued any of them. Useless waste of time IMO!
I'd say it is probably something brake related. The check engine light could mean anything so definitely check asap. You bought a vehicle at the end of its "cheap" life and you may have a serious money pit moving forward. Hopefully you didn't pay more than $2k or so for it.
Use a long pipe as a breaker bar. Or else connect another wrench to the end of the one you are using. DON'T use a ratchet! It will break the ratchet and possibly injure you when it does! I really suggest you get an impact wrench.
Sounds like your mirrors got bumped and are out of sync. Happens on mine. I just manually pop the mirrors back so that they have the travel they need to reposition properly. Just put them to the end of travel with the power switch. If they pop, move it back so it has more room and try again...
I recently swapped my air ride out for traditional shocks/springs and I suggest if you don't have one to get an impact wrench. Those bolts are in there really tight!

You need a 7mm socket with extensions and a 7mm open end wrench to remove the COP bolts. One of the COP plugs is hard to get to without the wrench...
