without going into too much detail the addition of the 3rd tweeter generally adds a higher range. BUT that said a good set of 2 ways can be as good or better.
If you adding a good 4 ch amp look into higher power handling speakers. If you do not have a subwoofer in the truck now you will get a little more bass from a 6x8 But you will get some distortion at higher volume levels. Generally I like 6.5" way better, and there are a few on the make that come with 6x8 adapter plates
