manual downshifting when towing or downhills

on my older 2002 F 150 I use to press the overdrive button to disengage overdrive in driving in mountains, driving down hills, and towing trailers. with my new 2011 expedition I was unsure how to downshift because third gear is so much slower then 3rd gear in my old truck. can anyone give me suggestions how to manually down set correctly using the overdrive tow haul button. I also and using the edge evo set to the 87 octane settings.I believe that this setting is most similar to the tow toes settings on the other edge programmers.

I have a 2011 Limited. If you put it in Tow/Haul mode and apply the brakes while going downhill it will downshift into 5th even 4th depending on how hard you are braking.

Unfortunately there is no "manual" control over the downshift. I really don't like giving up my control to the computer but it does work when I am towing my boat.
