Update--
My mechanic was finally able to track down the wiring problem and correct it. Thanks to Bedrck47 for all the helpful information. Without that it would have been much harder. It took several hours of tracing back the wire until finally finding where the wire had broken inside of the wire harness conduit. I didn't realize that with the temp sensor being out of commission the engine was actually not running correctly either. The car runs like it should now and of course I can finally enjoy A/C again.
