Warmed her up this morning for a spark plug change, driving around the neighborhood.

Took T+3 mins to budge the gauge even a hair, T+4-5 mins for any significant movement, and ~T+7mins until the gauge was around the middle and stopped moving much. ~35mph, hills, stopsigns.

Normal? Or a tad slow?

Don't confuse coolant temperature with engine temperature. Coolant temperature is measured at the output from the radiator, not at the engine. Three (3) minutes and the cylinder heads will be 200°F easily. Cylinder head temp is readable with a scan gauge if you know the parameter to check. I don't but the guys who programmed my Interceptor gauge do. :)
