issue with coolant temp sensor.

Hello everyone, yesterday I change my coolant temp. sensor (Expy 1998 eb 5.4) because my rpms go up and down, the problem was the temp sensor, it changes de temp from 192 to -40 and when the computer reads -40 the rpms go up in order to warm up, and an error code was coolant temp. sensor high output or something like that.
I go and buy a new temp. sensor, and when the engine was cold I change it. The problem using a scanner y solved, if I read the coolant temp using a scanner it is ok, and the rpms are now good, but the temp gauge is on C allways, I return to the store and change it for other sensor, thinking some issue with the sensor, but the same happend with 3, and also I try with the old sensor, and the same result.
After change the sensor the temp gauge was fine, but the readings using a scanner was below 32.
Do you have any idea for this? maybe some air in the system?
