On the Dodgetalk forums, most of those guys that do the electric fan from a junk yard go with a dual unit from a Ford Taurus I think. Partially because of the dimensions of the Ram radiator and also because it has a high flow rate. Then they get a fan controller from Summit or AutoZone or whatever and just fabricate some brackets.

Also, I don't see how more load on the electrical system would cause the alternator to drag more? It's not like the brushes clamp the armature tighter to produce more voltage. If your alternator can't keep up, other systems suffer. Like when you have a huge amp and sub woofers and the lights dim when the bass hits.

Yea, dual Taurus fans or a single Mark VIII fan. I'm sure there are others, though. Also, not sure if you have to get them from a particular model year or not. I know there are two different types of Mark VIII fans.

As for electrical load, it helps to get a soft start controller with multiple speeds. I know my Mark VIII fan would usually provide enough cooling at half speed. The cheaper relay based controllers are full on/full off.
