Nice truck! Now, I have to ask: What is a competition BBQ team?

We compete in BBQ cook offs in the kcbs. You can win money but its a lot of fun to do. You pretty much have 18-20 hours to cook brisket, pork shoulder, ribs and chicken and then turn in 6 samples to judges who grade you on taste, texture and appearance.
