Pretty straight forward.

Not sure if it's a vacuum/hose leak or maybe a transmission issue? Maybe fuel injectors? Spark plugs and ignition coils were changed two months ago with Motorcraft parts off Rockauto, fuel filter changed last year.

Follow up question....
Let's say it's fuel injector related, because my guess it is. My brother in law has an expensive scanner and found there was something wrong with the way the fuel is being distributed. He told me what he thinks it is, and says it's likely my fuel injectors failing (sorry, I'm pretty terrible with mechanic related stuff).

Should I replace all 8 fuel injectors with Bosch or Motorcraft? (there's like a $120 difference in price for all 8)

OR...

Should I have them professionally cleaned for $200 by this place?

I doubt it's the injectors. They don't all just decide to go bad one day.

Look for a pending OBD code. If you don't know what it means, do the research instead of throwing expensive parts at the problem.

Those trucks have a fuel pump and fuel pressure regulator as well as injectors. You have to learn some troubleshooting or find someone who knows how to do that.

A place to start would be with a fuel pressure reading at the fuel rail.

You may also have a catalytic converter problem, though that too should show you a code.

The 0207 and 0208 codes point to the power that controls two injectors injectors. Check your wiring and connectors that supply injectors on cylinders 7 & 8. Those two may not be firing properly.

It's less likely that two injectors are suffering from electrical failure, but you can swap 7 & 8 to other positions and see if the problem follow them to the new cylinders. Or check them with a meter for the proper resistance. When injectors fail they usually just get dirty and clogged. If that was the case here, you would not be getting the 0207 and 0208 codes. These two injectors are not operating properly electrically.

Other possible problems are a vacuum leak at the PCV valve hose or the intake manifold, though the 0207 and 0208 codes appear to indicate further problems.

I would say smoke test the intake system for a vacuum leak, and inspect or test the injector harness plugs on cylinders 7 & 8 ( drivers side rear two...). Get a fuel pressure reading at the fuel rail to see what the fuel pump's doing too. Sounds like someone may have damaged the injector plugs when they where working on them? The problem is somewhere on the driver's side of the motor. All those codes are driver's side related. Check those two EGR hoses there by the throttle body too.
