If you have the Ford Wiring Diagrams book then that is your bible for this. You should see what is common on both schematics first - color coding for the same wire, relay wiring etc. After that you could list the changes that need to be made.
Also if you could make copies of the pages you need, then place them side by side, you avoid the switching back and forth in the book. Bounce back and forth for 15-20 mins and you'll be confused.

There are around 17 pages of wiring diagrams on each of the two a/c controls. You've picked a good wiring project, some of the color coding is the same between the two. It can be done with some good planning.
I'd grab a harness from a donor and any other parts you need to make things easier. Then it is a simpler change - all the wiring is correct, plugs are correct and in the right location in the harness.
