I have a 2006 Eddie Bauer expedition and I stock headlights in it right now. Me and the wife due a lot of night driving due to work. What would you guys recommend for seeing better at night cause we don't want to be using high beams all the time?

I would recommend just a set of the Xenon HID bulbs off Ebay. They actually work very well, give off a good beam, and they're fairly durable. They're cheap enough, if you don't like the results yank 'em back out. But other than that they're aren't a lot of options. When you order a set just tell the seller you need the 9006 bulbs in the 5000 degree temperature color. That's the whitest light you will get. Above 5000 and the color starts to turn blue.
If you want to get crazy you can also put some in your fog lights. They're the 9145 type bulbs.
