Towing a Heavy Trailer - then False High Temp Alarms

A few times a year I tow my travel trailer -- which the truck does fine with. It probably weighs around 7000 lbs.

After the last couple of times, I've noticed a problem a day or two after I finish towing.

I'll be driving and get a Check Gauges alert on the info center, with a beep... the water temp gauge will be pegged. I've pulled over, multiple times, shut it off, found no evidence of overheating. Upon restarting it the gauge goes back to normal, truck runs fine. Sometimes this happens more than once, but after a day or two.. the condition goes away never to be seen again until after I tow again.

Any idea what this could be? The coolant level proves to be fine, no leaks, and no issues aside from described above.
