Have you towed anything before? Going to something that large and heavy is going to be un-advisable, by most people. Is that 7,900 UVW or GVW?
We have a 2019 w/Max Tow also. Our trailer is 36', 7980 UVW and a hitch weight of 745. This is right at the limit of what the Expy can do, the only reason we went this big is because we don't really have large hills to deal with around us, we live in North Texas. If we lived in Washington like you, I think it's going to be too much for those mountain passes. The transmission temps stay pretty good with this much weight even in some traffic on hot days, never seen it over the low 220's. The coolant temp will jump up to the low 230's on hills, especially in traffic on hot days. I need to look at getting a lower temp thermostat to help manage it a little better. The worst part is gas mileage. Low 9's to mid 8's at 60~65, and low 7's at 70. And it's a shame too, it feels better at 70 than at 60 or 65.
We use an equal-i-zer rated for 12k. I have it dialed it pretty good, I don't think I could get it much better. It actually tows very, very well for something this size. Tractor trailer suck is almost no existant, I don't have to compensate or anticipate for it. And I was driving 65+ the other day with strong side gusts of 25 the other day and it was very manageable.
With all that said. I think you should probably look at a 3/4 ton or larger truck for something that big and heavy. Preferably something with a turbo diesel to help with those mountain passes. A normaly aspirated engine is going to struggle with that trailer at high altitudes.
