Fat Jack, I have done this mod and I think it is well worth the time, effort and money. The big thing I like with the modification is the low end power gain that you get. Almost all other mods only net you top end power. This gives you gain across the whole RPM band.
As for your questions. The power gain that you can reasonably expect is about 6 hp and 8 ft-lbs of torque at all RPMs. Now, this assumes that your fans are running. So, you will see slightly more if the fans are not required (say 10 hp and 15 ft-lbs or torque). As you eluded to, you are not making more power, you are simply freeing up the power that is being used by the truck. To ensure cooling, you need atleast 3,000 cfm of air to be present when your fans are running (more on this in a bit).
As for the effects on the alternator, as long as you are running the 130 amp alternator, it isn't an issue. It only becomes an issue if you start adding other items that require lots of power (off-road lights, high power stereo, winch, etc). At this point, you need to consider upgrading your alternator.
As for the fans used, I am running dual 14" Derale fans. Each one is rated at like 1600 CFM. I have mine set up on separate controllers. The controllers are set up about 5F apart from each other. So, most of the time, I only have a single fan that kicks in. This is more than adequate to keep the motor cool, even on the hottest of days, as long as the A/C is not going. Kicking on the A/C, you need to make sure that both fans are running to give you the full 3,000+ CFM of air. Keep in mind that if you are driving over 30 mph, the fans will never kick on since you have more than 3,000 cfm of air already moving through the radiator. So, there is no need for the fans. This is less load on the engine, therefore you don't need as much of the gas pedal, therefore, better mileage.
The big failing point of most e-fan setups is the controllers. You get what you pay for. I recommend one of the digital ones that has an integrated relay. You can go cheap and get one of the wire wound controllers, but in a year, you are going to be cussing up a storm because your fans are not working. TRUST ME!!!!!!! I have more guys that went cheap and ended up spending the money later.
