silverback, choosing a muffler is kinda like asking what your favorite color is. Everyone has a different opinion on what is good better best.
Having all 4 cats still installed is going to open up your options as you can go with a slightly freer flowing muffler since your cats are going to provide the necessary restriction (ie, backpressure), which will then help keep your low end torque. But, this is not the cure-all either. You still need the muffler to provide some backpressure too.
I have a Flowmaster setup on my truck. I am running dual 2.5" tubes all the way from the exhaust manifolds back. I have the tubes equalized using a dual in/dual out 70 series muffler with 2.5" inlets and outlets. The volume of the exhaust is slightly louder than stock at idle and is noticeable under hard acceleration, but not one of those attention grabbing volumes either. I can still chirp my 37's with this exhaust using the 1st gen 5.4L motor (non-PI) with no real power adders (ie, chip, supercharger, etc).
I guess you need to ask what is more important to you: a certain sound in the exhaust, maximizing power, or maximizing fuel efficiency. You can only get 2 of the 3.
